Most summer 4-H activities on hold

A few years ago, our 7th and 8th grade 4-H members competing in the muffins project had to follow a new muffin recipe called Harvest Muffins. So I thought I would share that recipe with you this week. The ingredients call for 1 can (14 ½ ounces no salt added) sliced carrots, 1 teaspoon ground cinnamon, 1 egg, 1/3 cup vegetable oil, 1 cup sugar, 1 ¾ cups all-purpose flour, 1 ¼ teaspoon baking soda, ½ teaspoon salt, and 24 muffin liners (or use non-stick spray).

    

Begin by preheating your oven to 350˚ F. Drain the carrots of liquid and pour onto dinner-size plate. Sprinkle cinnamon over the carrots, then mash with a fork until all pieces of the carrot are about the size of peas. Put the mashed carrots in a medium size mixing bowl. Break the egg into a separate small bowl and whisk it well with a fork. Add the vegetable oil to the egg and mix well. Add the oil/egg mixture and sugar to the carrots and stir well. In a separate bowl, stir together the flour, baking soda, and salt. Add the flour mixture to the carrot mixture and stir until moist. Pour the batter into muffin tins sprayed with nonstick spray or lined until each is about half full. Bake at 350˚ for 25-30 minutes*. Test center of one muffin with a toothpick. If it comes out clean, the muffin is done. (*To make 24 muffins, bake for about 20 minutes until toothpick inserted in center comes out clean.) Cool for 5 minutes. Best served warm.

Summer Activities

    

Our staff has evaluated and discussed our plans for 4-H summer activities. Since we are going to have to practice social distancing all summer, we don’t see how we are going to be able to do some of the trips we had planned. We are making every effort to schedule the 4-H Reward Trip/Summer Waves trip for later in July. We will get information out about this trip as soon as possible.

 

No Camp This Summer

    

Last week, Mr. Arch Smith, State 4-H Director, announced that we were not going to be able to hold our regular summer camping program this year due to the restrictions of the Corona Virus. We are so disappointed that our kids will not get to experience this great adventure. Full refunds are being issued to families and should be in the mail this week. We are as upset as most of our 4-H members are about not getting to go this year. We will just have to look forward to what next summer will hold for us.
