If there’s one dessert that I would say is my “go-to,” it would be Chocolate Delight. Why? Because it’s quick, easy and affordable. And who doesn’t love Cool Whip, cream cheese and chocolate all rolled into a one-dish dessert? Have you ever witnessed at social gatherings, either church or family get-togethers, someone tends to bring their signature dishes over and over? I remember my mother-in-law always made banana split cake. It was one of my favorites but I have probably only made it a few times. Other family favorites I remember were chicken and dumplings, egg pie, chicken and rice, coconut cake, pumpkin squares, blackberry cobbler (with handmade rolled dough) and fried apple pies, just to name a few. I remember the face that goes along with every one of them.
Are there friends and family you associate food with? There’s nothing better than gathering around a table, enjoying a meal, and spending time with those you love. Unfortunately our busy lives, with everyday chores and obligations, rob us of that enjoyment. I have found that you have to be intentional with your time and make those events a part of your life. I challenge you to do just that, spend time around the table with your friends and family, confiscate all the cellphones, and enjoy the conversation!
Chocolate Delight
1 1⁄2 cups all-purpose flour
1 1⁄2 sticks margarine
1⁄2 cup chopped pecans
Mix together and bake at 375 degrees for 15 minutes. Let cool.
1 (8 oz.) package cream cheese, softened
1 large Cool Whip container
1 cup powdered sugar
2 small boxes of instant chocolate pudding
4 cups of milk
In a small bowl combine cream cheese, 1 cup of Cool Whip and the powdered sugar until smooth. Spread over top of cooled crust. Combine milk and chocolate pudding and whisk till thickened and place on top of cream cheese mixture. Spread the remaining Cool Whip on top. You can sprinkle chopped pecans on top layer, if you desire. Keep refrigerated.
