I hope everyone is enjoying this spring weather but I’m afraid the heat is on its way. I love these cool mornings and hate to see them disappear.
I’ve been dealing with crystals in my ear again this weekend! If you have ever experienced this vertigo issue, you know how debilitating it can be. I thought I was getting better yesterday afternoon and decided to go visit the kids but unfortunately on the way to the car, the sky started spinning. I tried my best to get to the front door but I was walking sideways and could not keep my balance and fell on the concrete. Cars were flying by on the highway and I know someone thought I was probably…(you know what). Fortunately, I was not hurt, just a sore hip and scratched arm but mostly embarrassed. Long story short, I’m feeling much better today (knock on wood). I have a great friend that adjusted my head a few times and hopefully my crystals are now where they need to be.
This recipe I’ve included today is a quick and easy dessert to prepare in a hurry. Cool Whip and cream cheese can make anything good! This recipe is prepared with strawberries but you can substitute blueberry pie filling instead. You can also add fresh blueberries on top for a red, white and blue dessert!

Strawberry Trifle
1 angel food cake (torn into pieces)
1 (8 oz.) package cream cheese, softened
1 cup powdered sugar
1/3 cup whole milk (or more as needed)
1 (16 oz.) carton Cool Whip
1 package strawberry glaze
1 quart fresh strawberries, sliced
Cream together cream cheese and powdered sugar. Gradually add milk till fluffy. Fold in Cool Whip. In separate bowl, combine strawberries to glaze. In a trifle bowl or glass bowl of your choice, layer cake, Cool Whip mixture and strawberry glaze.
Note: You can buy a grocery store angel food cake but I prefer to make my own. It is so easy and it is much better! (Betty Crocker angel food cake mix)
