I have a lot of favorite fruits but the one at the top of my list is a “Peach.” Picked fresh from a tree in our backyard growing up was the best. These peaches were not like most of the ones you find at the grocery store. They were large and perfect! When you cut them open, there was that stunning, yellow-orange color that certainly made your mouth water. I believe they were called “Elbertas.” My daddy was a master gardener and his devotion to whatever he was doing always proved fruitful. Whether it was fruits or vegetables, he always grew an abundant bounty.
I have used peaches in a lot of dishes. I have cut them in half and chargrilled, cooked down for fried tarts, put in ice cream, salsa, and pies and that’s all I can remember right now. Cobblers are probably my favorite. It’s easy and quick! I made this dish this week and it was all gone in one swoop! I hope you enjoy this delicious dessert and have a safe and wonderful 4th of July!
Peach Cobbler
1 stick butter
1 cup sugar
¾ cup self-rising flour
¾ cup milk
1 (28 oz.) can sliced peaches in syrup, undrained
Preheat oven to 350 degrees. Put butter in 9 x 13 baking dish and place in oven to melt. Sift sugar and flour; add milk slowly to prevent lumping. Pour over melted butter. Do not stir! Spoon fruit on top, gently pouring in syrup. Do not stir! The batter will rise to top during baking. Bake for 30-45 minutes.
****You can use fresh fruit when available (peaches, blueberries, blackberries, apples, etc.) Clean, peel and core 2 cups of fruit and mix with 1 cup of sugar and 1 cup of water. Bring to boil in a saucepan and simmer for 10 minutes. Stir often, making sure sugar is completely dissolved. Substitute this for the canned peaches.
