Pam GillisI do not understand the “impossible” in this recipe. It is about as simple as one dessert recipe can be. I made this last week and about made myself sick eating it! I had to give some away to keep from devouring the whole pie.  Just a side note, I cooked this whole recipe in one deep-dish pie plate. You will need to cook it longer because of the size. Mine did not completely set in the middle. After refrigerating, it did firm up some. Next time I will make the recipe as two pies. Hope you enjoy this delicious dessert!

Impossible Pie

1 stick margarine, melted
1 ¾ cups sugar
½ cup self-rising flour
4 eggs – one at a time
1 tablespoon vanilla flavoring
2 cups whole milk
1 cup coconut (optional)

Mix first three ingredients in mixer. Add eggs one at a time. Add vanilla, milk and coconut. Pour into a well-greased pie pan (one large or two small). Bake at 350 degrees for 35 minutes or until center is firm.
