Several weeks ago, a neighbor/family member brought me a bag of freshly picked pears from her yard. I put the pears in the refrigerator and basically forgot about them until it was almost too late. I began thinking about the tarts that always accompanied the dessert table at most church functions and it piqued my sweet tooth. I peeled the pears, cut them up, added sugar, ground cinnamon, and cooked them on the stove until they were soft. I really don’t have a recipe for the Pear Tarts so I’ll try to just explain to you what I did. After allowing them to cool, I placed them in the refrigerator until use.
This weekend I decided I’d better cook the tarts or either my filling was not going to be any good. I used the original flaky biscuits and pulled the biscuits into two parts. After flouring my countertop, using a rolling pin, I rolled the biscuit into an oval shape. I can assure you not one of them looked the same. I placed a couple teaspoons or so of the filling onto the middle of the tart. I then folded over the dough to the bottom and pressed the edges with a fork. Assembling all of your tarts before frying will make the process easier. I added a small amount of oil to my black skillet on medium heat, carefully frying the tarts till brown on both sides. Place them on a platter with paper towels. You’d better enjoy one or two before the rest of the family arrives because mine all disappeared like hot cakes. Apple season is quickly approaching and I look forward to peeling some fresh North Georgia apples to make some apple tarts. Take the time and opportunity to enjoy these delicious tarts!
