Pam GillisSometimes simple is just the best and sometimes complex can be more satisfying. What a profound statement from a woman of a fly-by-the-seat-of-her-pants style. Being ADD (attention deficit disorder) can be frustrating, to say the least. I run from one thing to the other and oftentimes not completing all I had planned to accomplish in a day. From ironing, cleaning house, working two jobs, washing, and catching up on bookwork is so demanding in my daily life. I dearly love spending time with the Grands, our family and cooking for them. Wow, how my time just evades me!

 

Of late, I’ve taken up the hobby of quilting. With much assistance from Kayla (cousin) at “And Sew She Did” here in Douglas, I’ve been able to complete two and started working on the third quilt. It is so relaxing to sit down at a sewing machine and just concentrate on the simple task of stitching together fabric. I’m currently working on a more difficult quilt pattern (to me anyway). The fabric is partly from the shirts of my sweet daddy who died of a brain tumor in 2016. I loved my daddy to no end and miss him every day. To complete this quilt in its complexity will be a great feat with my minimal skill level but may be one of my most satisfying tasks. What have you started and never finished? My list is too long but I’m dedicated to mark many of them off my list this Spring! To Self, stay focused Pam!

Speaking of easy, Chewy Cake is a one pot, throw-in-the-oven quick dessert and it is one of our family favorites. Top it with a dollop of ice cream when it’s warm and enjoy!

Chewy Cake

Printable Version

1 stick butter, melted
1 box light brown sugar (2 1/3 cups)
3 eggs
2 cups self-rising flour
1 cups nuts, chopped
1 tablespoon vanilla flavoring
Powdered sugar, optional

Melt margarine in a medium to large saucepan. Add brown sugar and mix well. Let mixture cool slightly. Add eggs, flour, nuts and vanilla. Blend till smooth. Bake in a greased 9 x 13 sheet pan for 25-30 minutes. Sprinkle with powdered sugar, if desired.
