Several weeks ago, a neighbor/family member brought me a bag of freshly picked pears from her yard. I put the pears in the refrigerator and basically forgot about them until it was almost too late. I began thinking about the tarts that always accompanied the dessert table at most church functions and it piqued my sweet tooth. I peeled the pears, cut them up, added sugar, ground cinnamon, and cooked them on the stove until they were soft. I really don’t have a recipe for the Pear Tarts so I’ll try to just explain to you what I did. After allowing them to cool, I placed them in the refrigerator until use.
This weekend I decided I’d better cook the tarts or either my filling was not going to be any good. I used the original flaky biscuits and pulled the biscuits into two parts. After flouring my countertop, using a rolling pin, I rolled the biscuit into an oval shape. I can assure you not one of them looked the same. I placed a couple teaspoons or so of the filling onto the middle of the tart. I then folded over the dough to the bottom and pressed the edges with a fork. Assembling all of your tarts before frying will make the process easier. I added a small amount of oil to my black skillet on medium heat, carefully frying the tarts till brown on both sides. Place them on a platter with paper towels. You’d better enjoy one or two before the rest of the family arrives because mine all disappeared like hot cakes. Apple season is quickly approaching and I look forward to peeling some fresh North Georgia apples to make some apple tarts. Take the time and opportunity to enjoy these delicious tarts! Yummy!
Fried Pear or Apple Tarts
2 pounds of pears or apples, peeled, cored and cut up
1-2 cups sugar
2 teaspoons ground cinnamon (less or more, however you like)
1 pkg. Original Flaky Biscuits (I used Pillsbury)
Vegetable oil
Place cut up fruit in a medium size pot, add sugar and cinnamon. Cook on medium low until the fruit is soft. Let cool. Place in the refrigerator if not used immediately.
Divide each biscuit into two parts. Roll dough into an oval shape on a floured surface. Spread a couple teaspoons or so onto the middle of the dough. Fold top over the fruit and seal with a fork.
Using a skillet, pour oil to about 1⁄2 inch depth in pan and heat on medium. When oil is hot,carefully place each tart into the oil and cook until browned on both sides. Place onto a platter lined with paper towels.
** According to the amount of pears or apples you’re cutting up, taste and adjust the sugar and cinnamon as needed. Enjoy!
