4-H may have to hold virtual awards program

This week’s recipe is called Fiesta Quesadillas. It makes four servings, two quesadillas each. You will need the following ingredients: 1 cup diced red or green pepper, 1 cup diced zucchini, 15 ounce can of pinto beans, 8 – 7” flour tortilla (soft taco size), 1 cup of shredded 2 percent cheddar cheese, 1 cup plain nonfat yogurt, ¼ cup light Ranch dressing, and 2 tablespoons salsa (mild or medium).  Make the Ranch Sauce by mixing ½ cup yogurt and Ranch dressing in a small bowl. Set aside. Make the Zesty Sauce by mixing ½ cup yogurt and salsa in a small bowl and set it aside as well. Rinse pepper. Cut off the stem and remove the seeds. Chop into small pieces on clean cutting board. Rinse the zucchini and peel if you like. Chop into small pieces on cutting board. Put colander in the sink, pour the beans in, and rinse. Place one tortilla on a dinner plate. Spread half of the beans on one half of the tortilla and mash the beans with a fork. Top the mashed beans with 1/8 cup of the pepper and 1/8 cup of the zucchini. Sprinkle with two tablespoons of cheese. Repeat process for the remaining tortillas. Cook on medium heat for 2-3 minutes on either side until tortilla crisps and browns. Serve with the two choices of sauce.

Update

 

The May announcement of no summer camp was a surprise to us all and a big disappointment for our 4-H members who were really looking forward to a week of 4-H camp. We are also disappointed to not be able to have face-to-face contact with our 4-H’ers at this time too. Here are some other bits of news that our 4-H members, parents, and volunteers need to know.

State 4-H Horse Show – Cancelled

State 4-H Council Meeting – Cancelled

State 4-H Congress Competition – Postponed, possibly converting to a virtual contest

Summer Day Camps – Cancelled

    

We are in hopes of having a face-to-face awards program in late July or early August, but the odds don’t seem to be in our favor at this time. If we cannot hold it in person, we are investigating the possibility of holding a virtual awards program to announce our award winners with the option of 4-H members picking up their awards at the 4-H office when it is safe to do so.

    

Please remember to continue to safe practices of social distancing until it is safe to resume a normal lifestyle and the threat of COVID-19 has passed.
