During the 2006-2008 period of time, I wrote a weekly recipe article in our local newspaper, “The Douglas News,” entitled “Cooking with Pam.” I’m not sure how many followers I had but I’ve had many friends and family encourage me to pursue that route again. I am a wife to Dwayne, a mother to Jessica, Hamp and Grant, and a Granna to Ella, Annaclaire, Henry, Briggs, Addie Grace and Jed. The grands are my heart and they so enrich my life. I love spending time with them and being a “yes” to anything they want! I love Jesus! I love singing, worshiping, and the fellowship with my Christian brothers and sisters in Christ!
Being a lover of all things “food” and “home” is a passion of mine and brings me much comfort and joy, which affords me the opportunity to make others happy. Cooking for me is an adventure; searching out new recipes, tweaking to my own tastes and trying it out on my husband. He has no complaints, however, because most of the time he has to endure eating it all (literally). Numerous times during a week I’m strolling through cookbooks and magazines or online media, just watching and searching out something new and different.
On the home-side, I’m a DIY nut of all sorts. Along with my sidekick, Dwayne, we have been remodeling his parents’ home that was built in 1975. Needless to say, not much had been done to it since it was built. We have had the pleasure of ripping out “avocado” green carpet, stripping wallpaper, removing a wall or two, refurbishing old furniture, and everything in between. That thought may scare some of you but “I LOVE IT”!
What will “At Home With Pam” entail? The page will include weekly recipes and cooking videos. “Pam’s Picks” of the month will feature a local eating establishment. There will be videos of home tours, DIY tips and the list could go on and on. We are in the infant stage of my new adventure so I’m not sure where all of this will take me so hang on, the ride may be rocky to begin with but hopefully the end result will bless you with much happiness, too! Please feel free to suggest any ideas you may have. I’d love to hear them!
Deciding what recipe to include first was a challenge. Several suggestions were given and much of them were simple so maybe that ‘s where I need to land. My hubby is not a big sweet-eater but he loves a lemon pound cake that is made with a cake mix. Undoubtedly the easiest dessert you can make. (Is that a sin to bake with a cake mix?) Well, he thinks it’s scrumptious!
Lemon Pound Cake

1 lemon cake mix
1 small box lemon instant pudding mix
1/2 cup vegetable oil
1 cup water
4 eggs
GLAZE:
2 cups powdered sugar (add more if needed for consistency)
Milk (add 1 tablespoon at a time)
1 tablespoon of fresh or bottled lemon juice
Preheat oven to 350 degrees. Blend all the ingredients in a large bowl. Pour into a greased and floured Bundt pan or tube pan 10”. Bake for 35 minutes or until inserting a toothpick comes out clean. Cool in the pan then invert onto a serving plate. Mix the powdered sugar, milk and lemon juice and drizzle glaze over the cake.
