PamGillisGrilling is an essential part of our summer routine.   This is one of my favorite summertime side dishes.  Try it with a thick juicy steak or a meat of your choice.  Enjoy your summer and try to stay cool!

Skillet Creamed Corn

Skillet Creamed Corn

6 fresh ears of corn (cut into whole kernels)
1⁄4 cup green bell pepper, chopped
1⁄4 cup red bell pepper, chopped
1⁄4 cup shallots (or sweet onion), chopped
2 to 3 tablespoons of unsalted butter
1⁄4 cup heavy cream

In a skillet, melt 2 tablespoons of butter and add peppers and onion. Saute on medium heat for 3-5 minutes. Add 1 tablespoon of butter and the whole kernel corn. Lower the heat to low. Cook for approximately 10 minutes. Add heavy cream and cook a couple minutes till hot. Add salt and pepper to taste.

*This is a great side dish for any meat. Frozen corn could be substituted.
