Cheese Stars, Straws or Crackers, however you call them, have been a staple at every wedding, baby shower, bridal shower or any other event in the South for as long as I remember! I have recently served these at a couple events and got glowing reviews and requests for the recipe. There was a restaurant in Nashville, GA named “Mimi’s” and it came out of the cookbook Mimi sold. Apparently she was a great cook! Note to remember, if you don’t like “spicy.” you may want to cut back on the cayenne pepper. Hope you enjoy!
Cheese Crackers (Straws or Stars)
1 lb. cheddar cheese, extra sharp or sharp, grated
2 sticks margarine, softened
2 cups cake flour or plain flour
1 tsp. salt
1 tsp. Red (cayenne) pepper
1 tsp. paprika
1 tsp. sugar
Mix and use with cookie press or roll and cut with cookie cutter. Bake 10 minutes at 400 degrees.
