Several weeks ago, a neighbor/family member brought me a bag of freshly picked pears from her yard. I put the pears in the refrigerator and basically forgot about them until it was almost too late. I do not understand the “impossible” in this recipe. It is about as simple as one dessert recipe can be. I made this last week and about made myself sick eating it! I had to give some away to keep from devouring the whole pie.  Just a side note, I cooked this whole recipe in one deep-dish pie plate. You will need to cook it longer because of the size. Two special cakes that are always at the top of my list of favorites are coconut and carrot.  One might think, “Carrots in a cake?  I don’t think that would be good.”  Well, you need to give it a try.  Many cakes and breads are made with vegetables.  Just to name a few, zucchini, pumpkin, rhubarb, parsnip, carrot, and sweet potato.  I have never made anything with rhubarb and parsnip but it’s worth a try,  I guess.  This cake is moist and delicious!  Hope you enjoy! I have a lot of favorite fruits but the one at the top of my list is a “Peach.” Picked fresh from a tree in our backyard growing up was the best. These peaches were not like most of the ones you find at the grocery store. They were large and perfect! I look forward to this time of the year when there are fresh vegetables you can buy at the farmer’s market or when neighbors are kind enough to share their garden goods. My neighbors, Elaine and Rodney Ragsdale, were so hospitable in bringing to my doorstep the largest tomatoes I have ever seen. I love sweets but try not to have too many around because I’m usually either dieting or about to start.
